Deliciously diverse biscuit idea
Inspiration for something sweet with a cup of tea
My favorite is teff biscuits, and I feel that my mother Rosario's recipes are among my most valuable belongings.
Serves 18
Ingredients
3/4 cup teff flour
Teaspoon salt
1/4 cup rapeseed oil or oil of choice
Teaspoon vanilla essence
1/2 cup crunchy peanut butter
1/4 teaspoon desiccated coconut
1/4 cup maple syrup
Instructions:
Put the flour and salt in one bowl
The wet ingredients go into another bowl
Measure out a teaspoon of the mixture and make it into a ball. Press it down 2 ways with a fork, enough not to flatten it down
Bake in a preheated fan oven at 180 degrees for 15 minutes
These store well in a lunch box for days.
